Recipe
Ingredients:
- 250 g of black beans
- 1 bay leaf
- 1 onion
- 1 red ball pepper
- 1/4 of teaspoon of pepper
- 2 tea spoons of salt
- few leaves of parsley
- 1/2 of teaspoon of cumin
- 1/2 of teaspoon of oregano
- 3 cups of rice
- few slices of bacon
Leave black beans immersed in water for a minimum of 2 hours. Wash them and drain.
Using pressure cooker, cook black beans in fresh water for 20 minutes.
Fry in deep pot onion and red ball pepper cut in little cubes. Add spices: pepper, parsley, cumin, oregano. Mix it well.
Add 5 cups of liquid where beans have been cooked. Stir well. Add salt, and rice, and cooked beans. Cook on medium heat.
Fry little bit of bacon cut in little cubes, and add it to the rice and beans.
When it becomes thick stir it slowly and carefully with the spoon.
Low down the heat and cover. Cook it for 20 minutes without taking the cover off.
